On Monday 15th September, the Ristorante Al Castello will welcome Mauro Uliassi for what promises to be a memorable evening in the Reschio calendar. A name that needs little introduction, Uliassi is among the very few chefs in Italy to hold three Michelin stars, celebrated for a cuisine that continues to surprise and enchant more than three decades on.
His is a way of cooking that blends discipline with emotion, grounded in a profound respect for nature and the rhythm of the seasons. Uliassi is not simply a chef, but a creator of culinary landscapes—each dish composed with precision, intention, and the quiet power of restraint.
His story began on the shores of Senigallia, on Italy’s Adriatic coast, in a modest seaside kiosk that he transformed into a temple of contemporary Italian gastronomy. Over the years, he has forged a distinct identity, rooted in research and elevated by an obsessive care for detail. Every year, his restaurant closes for a short time to allow space for creative experimentation — an approach that mirrors the philosophy of Reschio, where every element, from architecture to agriculture, from hospitality to the table, is treated with the same reverence for land and time.
On this special evening, guests will be invited to take part in a singular journey, created exclusively for the occasion. The tasting menu will unfold like a conversation between sea and woodland, a dialogue between wild herbs and delicate broths, where every flavour is given the space to speak for itself. The dinner is priced at €550 per person, including wine pairings, water, tea and coffee. Reservations are essential as seating is limited. For guests staying at Reschio who prefer not to attend the event, an alternative dining experience will be available at the Ristorante Alle Scuderie.
